Have Your Keto Cake and Eat It Too with Lupin Flour
This vanilla keto cake doesn’t need carbs to rise to the occasion. Its soft, fluffy texture and low-carb status are thanks to keto dream team lupin flour and oat fiber. With an approachable list of ingredients and a less than 20 minute baketime, this recipe will be your new go-to for all your keto-friendly celebrations. Frost it with keto icing or enjoy it plain; just make sure to grab a slice before it’s gone!

Ingredients

1.5 cup Modern Mountain Lupin flour

2 TB Modern Mountain Oat Fiber or Modern Mountain Bamboo Fiber

1 cup Modern Mountain Allulose

1 tsp baking powder

1/2 tsp salt

3 large eggs

1.5 stick melted butter (12 TB)

3 TB vanilla extract or cake batter extract
Directions
Combine dry ingredients together (lupin flour, oat fiber, sweetener, baking powder, and salt).
Combine wet ingredients together (melted butter, eggs and extract of choice)
Mix together dry and wet mixes. You can fold them together with a spatula or a hand mixer on a low speed.
Pour into a parchment-lined 9” cake pan, cover and let it sit at least an hour or overnight.
Preheat oven to 350F.
Bake for 15-17 minutes. Watch carefully because it will burn easily. Start checking at 15 minutes. A toothpick test always is great to do.
Remove from oven and allow to fully cool.
Recipe Note
- Cake batter or vanilla extract can be used to make a yellow or vanilla cake. 3 TB are highly recommend. It may seem like a lot but you will need that much to get the flavor to really come out in the cake.
- Baking times are important. At 20 minutes the outside of the cake will be really dark. Depending on factors of temperature or how consistent the oven, we've found ~15-17 minutes to be ideal.
