Say Cheese! Crispy Keto Parmesan Crackers Are a Reason to Smile
Enjoy these crispy, savory crackers with hummus, tomato soup, or add them to a cheese plate. You can also simply snack on them—this is a cheese cracker that can stand alone! They will fill your home with a delicious, toasty aroma while they bake. An initial short bake at 350 gets them golden-brown; another half-hour to dehydrate them completely elicits a perfectly crispy texture you won’t be able to resist.
Ingredients

1 Tablespoon ground flax meal

2 Tablespoons full-fat yogurt

1 teaspoon maple syrup

¼ cup freshly shredded Parmesan Reggiano cheese

1/16 teaspoon salt

¼ teaspoon smoked paprika

½ teaspoon baking soda

¼ cup Modern Mountain Lupin Flour
Directions
In a small bowl, mix the flax, yogurt, and maple syrup together. Allow the mixture to sit for about 5 minutes.
Add all ingredients to a food processor and blend until thoroughly combined and dough sticks together.
Preheat oven to 325 degrees Fahrenheit
Turn the dough out onto a sheet of parchment paper or a silicone baking pad. Cover with a sheet of wax or parchment paper and then using a rolling pin, roll out the dough until it is a thin and even thickness.
Bake for 10 minutes then turn the oven down to 175 degrees F.
Leave the oven cracked to help it cool down. Meanwhile, carefully cut the crackers into desired shapes and return to the oven for 20 minutes.
Flip the crackers and return for 10 more minutes.
Remove from oven and allow to cool on a cooling rack.
