Keto Pizza Recipe With Lupin Flour That’s Easy as Pie
Keto pizza” might sound like an oxymoron, but we promise we’re not pulling your leg. In fact, this low-carb crust made with lupin flour and oat fiber is likely to give you a leg up when it comes to crushing your keto goals while quashing your sugar cravings. With a texture that’s crispy yet doughy and a taste savory enough to support the cheese and toppings of your deepest desires, this keto pizza recipe can keep up with whatever kind of pizza night you have in mind.
Ingredients

1/4 cup Modern Mountain Lupin Flour

3 Tbsp Modern Mountain Oat Fiber or Bamboo Fiber

2 cups part skim mozzarella shredded cheese

1 oz full fat cream cheese

1/2 tsp baking powder

1/4 tsp salt

1 large egg
-
1/2 tsp Italian seasoning

1/2 tsp garlic powder
Directions
Combine your dry ingredients of lupin flour, oat fiber, baking powder, salt, Italian seasoning and garlic powder together.
Preheat oven to 375ºF.
In a microwave safe bowl combine cream cheese with 2 cups of mozzarella cheese. Melt in 30 second intervals stirring between intervals until cheese is melted and smooth.
Slowly add in dry ingredients and avoid from being to harsh while folding it in with a folding spatula because the flour will fly everywhere in the air.
While folding once the cheese had cooled down add in a beaten egg.
This will be enough moisture to bring everything together in the folding process.
Continue to knead for about 3 minutes with the folding spatula.
Use the spatula to scoop the “dough” out of the mixing bowl and place it between two sheets of parchment paper. The dough will be a little sticky but not so much it’s making a mess.
Using a roller pin roll the dough into a circle with about an 1/8 in thickness. Remove the top parchment paper. It should easily come off.
Next, take a fork and poke across the pizza crust.
Place in preheated oven for 20 minutes.
Remove from oven and top off with your favorite toppings then bake at 400ºF for 10 minutes.
