Keto Waffles That Make Low-Carb Breakfast a Breeze
Rise and shine, sleepyhead! You’re not dreaming: these fluffy, low-carb waffles don’t compromise on taste or texture! The combination of lupin flour and oat fiber allow for a low carb version of a classic breakfast you won’t want to miss out on. It is naturally gluten-free and can be dressed up with your favorite keto toppings. One of our favorite ways to enjoy them are with keto maple syrup or with some raspberries. The recipe is simple and only calls for a few ingredients. Try this out on the weekend and share with the fam!
Ingredients
- 3 eggs

3/4 cup Modern Mountain Lupin Flour
-
1/4 cup Modern Mountain Oat Fiber or Bamboo Fiber
- 1/4 tsp xanthan gum
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup heavy cream
- 2 tbsp coconut oil
Directions
In a large bowl, whisk together flour baking powder, salt and xanthan gum
- Stir in the oil and eggs. Mix until blended
- Slowly add in the heavy cream until desired batter thickness is achieved.If it ends up too thin, add in more almond flour to get it thicker
Pour into waffle maker to cook.
- Top with your favorite keto syrup or toppings!
