And it doesn't get much easier than low-carb lupin flour bread that can be made in just 60 seconds. That's right - just 60 seconds in your microwave and you'll have a couple slices of delish low-carb bread that tastes surprisingly similar to the real thing.
You can feel confident you'll be able to stay in ketosis and under your net carb target since two slices of bread have just 6g of net carbs and 30g of protein. Slap this bread around slices of your favorite meats and cheeses, and this bread is the first step to your new go-to low-carb, protein-packed sandwich.

¼ Cup Vital Wheat Gluten

4 TSP Modern Mountain Oat Fiber or Bamboo Fiber

4 TSP Modern Mountain Lupin Flour

2 TSP Coconut Flour

2 TSP Allulose
-
1 TSP Baking Powder
-
1/16 TSP Xanthan Gum (optional)

Pinch of Salt

¼ Cup Water

2 TSP Olive Oil
Directions
In a small mixing bowl, combine vital wheat gluten, lupin flour, Oat Fiber 500, coconut flour, allulose, baking powder, xanthan gum, and salt. Whisk to combine.
Slowly add water and oil, mixing with a spoon until everything begins to come together.
Use your hands to form the dough into a ball. Knead the dough for about a minute on a lightly greased surface or sheet of parchment paper.
Place your dough in between two pieces of lightly greased parchment paper. Using a rolling pin, roll the dough out into one large rectangle.
TIP: If your dough is springing back, it means you may need to give the gluten a rest. Roll it out as much as you can, leave it alone for a minute or two then continue rolling until you reach your desired shape.
Place the dough onto a lightly greased plate or microwave-safe container. Microwave for 1 minute to 1 minute 30 seconds.
TIP: If you find that your bread is a bit too firm, try microwaving for less time.
Let your bread sit for a minute to cool slightly, and then remove it from the plate or container.
Slice in half for two pieces of bread, and create the low-carb sandwich of your dreams!
