Ingredients

6 tbsp Modern Mountain Meringue Powder

½ cup hot water

8 cups (2 lbs) sifted powdered sugar

Optional: 1 tsp vanilla or almond extract for added flavor

Option: 1 tbsp light corn syrup for a softer, shinier frosting
Directions
In the bowl of a stand mixer, combine water and meringue powder. Using the whisk attachment, mix on medium speed until fully dissolved (about 30 seconds).
Note: If you don’t ensure meringue powder fully dissolves in this step, you may end up with grainy icing.Using the paddle attachment, gradually add sugar and mix on medium speed for 5 minutes. If using, add vanilla and/or corn syrup.
Check the icing consistency.
Extra thick: The frosting does not flow off the whisk at all. It is very stiff.Thick: The frosting should flow off the whisk slowly and smooth out in 18-20 seconds.
Medium: The frosting should flow off the whisk at a medium speed and smooth mostly out in about 15-17 seconds.
Thin: The frosting should flow off the whisk quickly and smooth out in about 10-12 seconds.
To reach the desired consistency, add water, one tablespoon at a time, mixing and checking the consistency before adding more each time.
Divide icing into small bowls and dye with gel food coloring, if desired. Transfer to piping bags and begin decorating!

Tips and Tricks for the Perfect Royal Icing:
Keep icing that is not being used covered with a damp paper towel or plastic wrap to prevent drying out.
If your icing becomes too thin, gradually add more confectioners sugar until desired consistency is reached.
Add 1 teaspoon vanilla or almond extract for added flavor.
Allow icing to dry for several hours or overnight, depending on the thickness.
